General Comments
NOTES:
-ENSURE COLD WATER (65-75) IS USED FOR QUAT SANITIZER
-ENSURE HAND-WASHING IS OCCURRING BEFORE WRAPPING SILVERWARE AND THAT THE AREA WHERE THIS IS OCCURRING IS CLEAN.
-ENSURE CHICKEN IS STORED BELOW OTHER MEAT AND READY TO EAT FOODS AND THAT THE RISK OF CROSS CONTAMINATION IS LIMITED. I.E. THROUGH FOOD HANDLING PRACTICES AND HAND WASHING PROCEDURES.
-RECOMMEND HAVING A REGULAR PROCEDURE FOR MONITORING FOOD TEMPERATURES.
